Oh, is that a recipe for Spanikopita? If so, I love those things! I might have to try that recipe out, even though I'm not usually good with flaky pastries.

Sort of. It's loosely based off of a few I've seen.

Anyway, I "cheat" and buy the pre-formed miniature cups made out of fillo dough (Athens brand) because I'm not that patient when it comes to layering the delicate sheets (nor that successful in not tearing them.) My language gets rather "interesting."

Ah, good idea. Sure cuts out most of the legwork And Athens brand is wonderful...I love their feta cheese.

A friend of mine enjoys a pastry I make that is loosely based on a French pastry: wrap crescent roll dough around a "finger" of good-quality chocolate (making sure the dough completely seals in the chocolate), then bake according to the directions either on the crescent roll package or in the cookbook.

Sometimes I'll "gild the lily" with a drizzle of melted chocolate after they're out of the oven.

When the weather is dry enough and I have enough egg whites, I'll make a meringue cookie that tastes remarkably similar to an Almond Joy candy bar. I got the recipe from one of my cooking magazines, and it is a hit with people who aren't willing/able to eat the candy bar due to health issues or to personal dietary issues.

Some things I've made during the heat wave: homemade frozen "pops".

I've made pudding pops and fruit-and-yogurt frozen pops. Less expensive than buying pre-packaged ice pops (and one can regulate what is in them better. ) And, unlike water ice pops (Popsicle is the brand most recognized here in the US I think) there's some calcium from the dairy and additional vitamins and minerals from the dairy (and the fruit in the fruit-and-yogurt pops.)

I am a big fan of pizza. But i am on diet so whenever i have a bad day i eat PizzaFree diet fat free pizza. It taste like normal pizza but more important it has only 248 calorie.
