Aren't those called tea sandwiches? I think I've read that in the 50s and 60s they served those cucumber sandwiches for luncheons and other gatherings. Sounds pretty good to me.

My mother used to eat cottage cheese and cucumber sandwiches fairly frequently (my furry manager [aka :kitty:], Shadow Kibblesbane used to take a bite of them, too, when they resided together.)

Anyway, concerning spearmint in spinach dishes: I believe it's a rather common combination in Athens, Greece (but don't quote me on this.) I rarely make spinach without spearmint now.

A couple more "weird" combinations: adding herbs/edible flowers to cake batter (by lining the pan with the herbs/flowers) or adding chocolate chips to banana bread/banana cake.

Chocolate chips in banana cake sounds good... I'm pretty sure that I
couldn't make myself eat flowers, though. I've heard of it and I know
it's done, but I'm not sure I could handle it. That said, there are other
things from nature that people eat that would be MUCH worse (uh...
BUGS.... ICK!)

I've used chive blossoms to garnish vegetable broths and some salads, nasturtiums in salads and some sandwiches, plus a few other plants/flowers (if you can't/don't grow your own, you might find them in the produce section of your favorite store or at the local farmers markets [you might be able to get some more tips at the farmers market on how to properly use them, too]]) I try to avoid eating any sort of insect/arachnid/slug/snail that might come across my plate.

Concerning the chocolate chip banana cake, have you ever tried those chocolate covered frozen bananas? Similar deal.
